Nasturtium Salt


Nasturtium leaves and flowers, Jacobsen kosher salt.

The nasturtium plant (tropaeolum majus) is edible from root to blossom. The leaves and flowers have a lightly peppery aroma with a hint of mustard-like heat. Here, the raw leaves have been pureed into the salt, while the flowers were dried and powdered for maximum nutrition and beauty.

Use as a finishing salt over soft poached eggs, dust over fresh warm ricotta, garnish raw fish or quickly steamed vegetables. Medicinally, high in vitamin C and iron with antibiotic properties.
