Butterfly Pea Flowers

The butterfly pea flower (clitoria ternatea) has been used as a medicine, a tea, a food colorant and an ornamental plant for many centuries. These beautiful flowers are merely the precursor to a nutritious food source. When steeped in hot water, the flower creates a vibrant natural blue tonic; add a touch of acid from citrus or your vinegar of choice and your elixir will morph into a lovely shade of purple or pink.

Steep with other fresh herbs for a tisane, as a base for a cosmic lemonade, freeze into ice cubes for your cocktails, or infuse into a vibrant simple syrup. Medicinally, full of antioxidants much like green tea, collagen enhancer, brain booster, and calmative.
