Butterfly Pea Flowers

Blue pea flower.

The butterfly pea flower (Clitoria ternatea) has been used as a medicine, a tea, a food colorant and an ornamental plant for many centuries. These beautiful flowers are merely the precursor to a nutritious food source. When steeped in hot water, the flower creates a vibrant natural blue tonic; add a touch of acid from citrus or your vinegar of choice and your elixir will morph into a lovely shade of purple or pink.

Steep with other fresh herbs for a tisane, as a base for a cosmic lemonade, freeze into ice cubes for your cocktails, or infuse into a vibrant simple syrup. Medicinally, full of antioxidants much like green tea, collagen enhancer, brain booster, and calmative.

Petal Confetti

Lavender petals, cornflower petals, rose petals, chamomile, flowering chamomile, flowering coriander, calendula, marigold, chrysanthemum, anise hyssop.

Floral mixtures bring the garden into synergistic harmony. These petals span their seasons from spring to late summer, distilling longer days into preserved colors that bring joy into the winter months and beyond.

Use to decorate sugar cookies, roll into fresh pasta, liberally into floral tea cakes, or freeze into ice cubes.

Lavender and Cornflower Buttons

Lavender petals, cornflower petals.

Lavender and cornflower alike have the ability to lite-up an entire field with their purplish-blue hues. If you catch the light just right they seem to sparkle for miles fading into the horizon and beyond. It is said that if the woman of a young man in love travels from him he is to wear cornflowers around his neck; if they remain vibrant, his love will return to him once more. When used in spells and magic lavender is said to promote passion, harmony and cooperation with one's lover.

Steep for an indigo-hued iced tea or into cream-based desserts such as ice cream and panna cotta. Infuse with honey for a cocktail enhancer. Medicinally, lavender is calming, best used as an anti-anxiety.

Chamomile and Calendula

Chamomile flowers, calendula petals.

Both chamomile and calendula are flowering herbs from the Asteraceae family. Their deep medicinal histories date back to at least ancient Egypt, where they were prescribed to treat colds, stomach issues and to induce better sleep. Commonly used in medieval love potions, chamomile is said to bring understanding to confusing situations and elicit joy while attracting the love one seeks.

Steep for a calming tea or into cream for desserts. Infuse with honey for a cocktail enhancer. Medicinally, helps fight common colds and is a calmative for the nerves.

Hibiscus Mint Spice Mix

Toasted white sesame seeds, toasted black sesame seeds, hibiscus powder, dried thyme, dried marjoram, dried mint, dried cilantro, onion powder, kosher salt, coriander seed, aniseed, black pepper, garlic powder.

Hibiscus flowers (malvaceae) conjure up tropical memories of vacations past and lands far away. This tart and refreshing flower is a welcome addition to any pantry where an acidic punch is needed to brighten up a dish. These flowers have a brief life, reminding us of the ephemerality of experiences, reminding us to stand in gratitude for the beautiful moments we get to enjoy.

Mix into rice or dusted over meats. Mix 2 tbsp spice mix, 1/4 cup olive oil for a tart and seasoning or vinaigrette base. Medicinally high in vitamin C, can reduce blood pressure and assist in lowering body temperature.

Sunflower Petal, Seed & Spice Mix

Sunflower seeds, sunflower petals, toasted nori powder, toasted dulse powder, coriander seed, fennel seed, cumin seed, caraway seed, dry thyme, dry cilantro, dry dill, dry mint, dry marjoram, pumpkin seeds, toasted white sesame seeds, toasted black sesame seeds, aleppo pepper, sweet paprika powder, sumac powder, orange peel powder, onion powder, sweet green pepper powder, kosher salt, garlic powder.

The sunflower, reminiscent of the sun itself, stands tall and proud as an iconic symbol of strength, positivity and lasting happiness. This flowers message is to hold your head up high, believe in yourself and follow your dreams. Native to Americas sunflower has been a source of nutrients for centuries, leaves, buds, petals and seeds are all edible. In this spice mix the sunflower seeds have first been sprouted to make all their nutritive benefits available to your body and the petals gently dried and mixed in.

Mix into steamed rice, add to salads for a savory crunch, top soft scrambled eggs with copious amounts and eat alongside avocado and kimchi. Medicinally rich in b vitamins, selenium, vitamin E. Acts as an anti-inflammatory and may help lower blood sugar.

Nasturtium Salt

Nasturtium leaves and flowers, Jacobsen kosher salt.

The nasturtium plant (tropaeolum majus) is edible from root to blossom. The leaves and flowers have a lightly peppery aroma with a hint of mustard-like heat. Here, the raw leaves have been pureed into the salt, while the flowers were dried and powdered for maximum nutrition and beauty.

Use as a finishing salt over soft poached eggs, dust over fresh warm ricotta, garnish raw fish or quickly steamed vegetables. Medicinally, high in vitamin C and iron with antibiotic properties.

Smoked Caper Salt

Capers, smoked Jacobsen kosher salt.

The caper bush (capparis spinosa) is a perennial plant best known for its edible flower buds, which are commonly eaten salted and pickled, as well as a flavor and seasoning all their own. Here, we’ve dried and powdered the pickled buds before adding them to smoked salt.

Use as a finishing salt for roasted vegetables, dust over fresh mozzarella or burrata, adds depth to seared fish or burrata, seared fish or griddled chicken. Medicinally, high in polyphenols and anthocyanins and used as a digestive aid.

Rose Petal Salt

Rose petals, Jacobsen kosher salt.

Rose (rosa), an ornamental plant with thousands of cultivars, has been revered as a symbol of love and grace in almost every culture. Considered the flower with the highest energetic vibration, roses are said to have the power to seal love, ease a broken heart and calm a tired soul. With its alluring aroma, rose can be used to gently season a myriad of dishes, from sweets to game meats. Here, rose petals have been pureed and added directly to the salt before the mixture is set in the sun to dry.

Use as a finishing salt for grilled lamb or duck, garnish ice cream or a fruity olive oil with this salt, or put in your next granola mix. Medically used as an antioxidant, can soothe a sore throat or relieve headaches.

Fennel Pollen Salt

Fennel pollen, Jacobsen kosher salt.

In Tuscany, fennel pollen—called the spice of angels—is hand-harvested from the flowering seed clusters of the fennel plant (foeniculum). Gently sweet, it tastes like licorice that’s been sitting under a summer sun. This salt works in savory and sweet dishes alike and brings brightness to just about anything you sprinkle it on. Here, we’ve dried the flowers and pulsed them gently before mixing with salt.

Use as a finishing salt for grilled lamb, garnish ice cream and a fruity olive oil with this salt, or in your next granola mix. Medicinally, high in protein, minerals, enzymes, and anethols to calm the appetite.

Orange Blossom Vanilla Sugar

Orange blossoms, pomegranate flower petals, turbinado sugar, vanilla bean.

Orange blossom petals have long been revered for their intoxicating aroma, said to cause women to dance in joy as they bloom in the orchards. They are often distilled for their oils, used to attract bees in the production of flavored honey and dried for use in teas and sugars. Pomegranate flowers have long been a symbol of prosperity and ambition. Together, they make a sugar that is savory, sweet, and deeply floral.

Use to flavor simple syrup, roll in shortbread cookies before baking, or sweeten tea. Medicinally, orange blossom calm the stomach, nerves and headaches. Pomegranate flowers are good for the heart and high in anthocyanins.

Jasmine Flower Honey Sugar

Jasmine buds, powdered honey.

The Jasmine flower (jasminum sambac) releases its intoxicating fragrance after the sun has set. It is a flower of love, sensuality, and good luck. Here, the dried buds have been powdered into the honey sugar, releasing their aroma into it.

Use to sweeten hot or iced tea, make into a simple syrup, or as a sugar alternative in a tea cake. Medicinally, use as an aphrodisiac, a liver tonic, or sleep aid.

Clove Maple Sugar

Maple sugar, cloves.

Cloves (syzygium aromaticum) are the unopened flower buds of an evergreen tree. These little spikes were so revered in Indonesia in the 1600’s that the Dutch traded Manhattan to the British in exchange for the Indonesian islands where the spice was most prolific. Often used in magic rituals, cloves can be burned like incense to invoke prosperity and protection. Its scent is also said to assist in bringing the subconscious to the foreground for greater self-understanding. Here, whole cloves have been ground and mixed into maple sugar.

Use as a sweetener in mulled wine, add to your favorite granola, or as a sugar alternative to your favorite cookie recipe. Medicinally, use as an antibacterial or digestive aid. It is also rich in antioxidants.
