Flowers & Fermentation

Guests will learn three (3) techniques for preserving and transforming the flavor of various flowers, both familiar and new. Fermentation is ubiquitous across cuisines and one of the most powerful ways to transform flavor and nutrients. Recipe ideas will be provided, and students will take home all three (3) of the concoctions that they make as well as taste an array of unique experiments. Materials and starter cultures included.

Taught by James O'Donnell - James O'Donnell educates and consults on food system change with various audiences, from farmers to restaurants to the general public. He runs an event and education project called Bloom in addition to his work at the Stone Barns Center and hopes to foster community amongst farms, chefs, and others towards a better way to eat. James lives in New York City.
