Fennel Pollen Salt


Fennel pollen, Jacobsen kosher salt.

In Tuscany, fennel pollen—called the spice of angels—is hand-harvested from the flowering seed clusters of the fennel plant (foeniculum). Gently sweet, it tastes like licorice that’s been sitting under a summer sun. This salt works in savory and sweet dishes alike and brings brightness to just about anything you sprinkle it on. Here, we’ve dried the flowers and pulsed them gently before mixing with salt.

Use as a finishing salt for grilled lamb, garnish ice cream and a fruity olive oil with this salt, or in your next granola mix. Medicinally, high in protein, minerals, enzymes, and anethols to calm the appetite.
